How a Michelin-starred London restaurant found an EPOS partner it could trust

The background 

Hide 85 is a Michelin-starred restaurant in the heart of London, known for delivering an exceptional fine dining experience. Dining at Hide is about more than a meal; from greeting to being shown to your seat and receiving your first dish, Hide is about taking customers on a culinary journey. 

The challenge 

Now in their eighth year of operation, Hide has always had a very particular demand for its EPOS provider. It needed a system that could keep up with the fast-paced nature of the industry, whilst also contributing to the outstanding experience the restaurant provides. This meant the system had to be intuitive, reliable and easy to train staff on – without the need for lengthy onboarding or troubleshooting mid service. 

“I don’t have time to faff around trying to get things to work,” said Food and Beverage Director Matthew Mawtus. Having worked with TISSL at a previous fine dining restaurant, when he joined Hide 85 Matthew added that TISSL was “the only one I ever really considered.” 

Hide also had a very unique demand for its EPOS system. The restaurant holds the distinction of curating the largest wine list in Europe of close to 7,000 wines – a logistical undertaking that places considerable demands on its operations. Working exclusively with Hedonism Wines, Hide needed a way to integrate with the retail stock system, making live retail stock visible and accessible in the restaurant in real time. 

The solution 

TISSL worked closely with Hide to develop this bespoke integration, ensuring live stock levels were accurately reflected both in the restaurant and online. Despite concerns around the scale of work required, the solution was delivered to the satisfaction of Hide thanks to the flexibility of the TISSL system and team. “Stock levels are much more reliable,” said Matthew, “the solution works.” 

After the integration went live and the volume of wine data flowing though the system grew, there were a few performance issues that emerged, but TISSL’s support team responded quickly. 

“To give you guys credit, we raised this and they were all over it – resolved very quickly,” Matthew says. That responsiveness is something that he points to as a key reason why he has remained a loyal TISSL customer across multiple venues and over fifteen years. “The support is part of the reason I’ve stuck with TISSL. I ring up, someone looks at the account, and they get it sorted. They always get back to you.” 

In terms of measurable business impact, one of the most valuable features for Hide has been the ‘user sales by product’ report. With sommeliers working on commission, Matthew is able to run accurate sales reports quickly and efficiently, giving him clear visibility of team performance and helping drive revenue. 

“Being able to run that report quickly and accurately allows me to see how my team is performing. It’s a very unorthodox way of working, but it increases revenue – there’s no question about that.” 

Ultimately, Matthew’s view of TISSL reflects the quiet confidence of a long-standing partnership built on consistency. 

“We run a Michelin-starred restaurant and it has to be human. The EPOS is one piece of the overall puzzle, and the beauty of TISSL is it ain’t broke, so I don’t need to fix it.”
